The latest updates include a thoughtfully reimagined à la carte menu at Pierre’s TT and a vibrant collection of artisanal celebration cakes at CHOIX TT, both designed to offer a refined and memorable experience rooted in French culinary tradition.

At Pierre’s TT, the summer menu offers a sophisticated interpretation of modern French dining, with vibrant seasonal flavours and elevated plating. Starters include raw-cut langoustines glazed in red beet syrup, paired with Cremona mustard and heart of palm, and sautéed squid rings with herbs, button mushrooms, and black garlic. Signature mains include the Jodhpur-style monkfish fricassée served with orange blossom sorbet and confit salsify, and the roasted turbot fillet with Terre de Sienne butter, artichoke, and salad shoots, finished with a coconut milk velouté. For pasta enthusiasts, the Melanosporum black truffle spaghetti delivers deep, aromatic richness.
Desserts at Pierre’s TT continue the restaurant’s tradition of creativity and flair. Highlights include the Pierre’s TT Millefeuille with rustic puff pastry, diplomat cream, caramelized mendiants, and lemongrass jelly, and a new trio of patisserie-inspired plates such as the souffléed biscuit with Guanaja ganache, Sicilian pistachio parfait, and macaronade drizzled with coffee syrup and caramelized pear.
At CHOIX TT, the patisserie introduces a newly curated cake selection for the summer—a refined expression of French celebration cakes made to order. Guests can enjoy the Charlotte aux Fruits Rouges, a light mousse topped with red berries; the Tropézienne, a brioche delight filled with luscious cream; and the classic Opéra Cake, featuring layers of coffee-soaked almond sponge, buttercream, and dark chocolate ganache.
